Yes, popsicles for breakfast, but these are healthy ones.
When my kids were young they didn’t like avocado. I was very confused by this since they liked almost all food and avocado is such a baby/toddler friendly one with its pretty color and creamy texture. Honestly though, neither my husband or I liked avocado either (for me it was the texture). I would have thought this could be the reason our children didn't like it either, except they liked other things neither of us did-like beans. My kids and I do love avocado now and I’ll be writing about how that came to be, another time.
But, back to breakfast popsicles. I knew avocado popsicles were popular in Mexico and decided to try making them as a way to get this incredibly healthy food into my kids. This did mean adding sugar and I try not to add sugar to most breakfast foods I make for them-not in yogurt, not in oatmeal, not in pancake toppings, but a little sugar for an avocado felt like a good trade off.
The avocado popsicles were a huge hit! Not only did my kids love them, but they also became my go to breakfast when we were running late to preschool. They could eat them while we walked and they loved walking around eating a treat for breakfast! I’ll have to ask them if they remember this.
Here is my very simple recipe. The only equipment you’ll need is a popsicle mold (I highly recommend these as I make lots of healthy popsicles and will be sharing all of the recipes) and a blender.
2 avacados
1 cup of water
1/4 cup of sugar
1-2 tablespoons of lime juice (bottled is fine)
small pinch of salt
First, combine the sugar and water in a small pan over medium heat until it simmers. Stir occasionally. Let it cool to room temperature.
Combine the avocado, lime juice, salt and cooled sugar syrup into the blender and blend until smooth.
Put the mixture into the popsicle molds filling them about 3/4 of the way full and freeze overnight (about 8 hours).
